Because most of the ingredients can probably be found in your pantry, this Easy Smoked Sausage Jambalaya makes a great dinner on a busy weeknight.

14ouncesSmoke Sausagecut into bite size pieces
1cupGreen Bell Pepperchopped
Salt & Pepperto taste - if desired
1Bay Leaf or 1/2 tsp. Oregano
14 1/2ounceDiced Tomatoes with Green Chilescan
14 1/2ounceChicken Brothcan
1 1/2cupsLong-Grain Rice
First, prepare the onion, bell pepper, and sausage while heating a large skillet over medium to medium-high heat.
Next, add the olive oil, onion, green pepper and sausage to the heated skillet. Continue to cook for about 5 minutes stirring occasionally.
Then, stir in the Creole seasoning, salt & pepper, and bay leaf. Stir and blend the spices for about 1 minute.
Now that the spices have warmed through add the diced tomatoes, water, chicken broth, and rice. Stir to combine the ingredients together and bring the mixture to a boil. Then, reduce heat to medium-low, then cover and cook for 20 minutes or until the rice is cooked.
