Preheat your oven to 400°F. Line a large baking sheet with parchment paper for easy cleanup. Set aside.
In a large bowl, whisk together the honey, olive oil, melted butter, salt, and garlic powder. Add the glaze to the carrots and toss well.
Spread the coated carrots onto the prepared baking sheet. Spread evening so they roast nicely.
Bake for 30-40 minutes, or until the carrots are fork-tender and starting to brown on the bottom. If you want extra browning, give them a stir halfway through.
Notes
Use rainbow carrots for added color, but orange carrots work just fine. Spread the carrots on the baking sheet well before roasting. Overcrowding will cause them to steam and get soft.Store leftovers, covered, in the refrigerator for up to 3 days.Reheat in the microwave or re-roast them in the oven.
