Start by cooking the rice. 1 cup dry rice plus the water suggested per your type of rice. (1 cup dry rice makes 2 cups cooked rice)

Heat olive oil in a skillet over medium heat. Add diced onion and garlic and sauté for 2-3 minutes until soft.

Add ground turkey, breaking it apart with a spoon, and cook until browned.

Stir in smoked paprika, chili powder, cumin, salt, pepper, soy sauce, and lime juice. Cook another 2-3 minutes until fully combined and fragrant.

In a small bowl, add the mayonnaise (or Greek yogurt), sriracha, lime juice, and a pinch of salt. Mix everything together. Set aside.

Divide the cooked rice between four bowls. Top with the seasoned turkey, then add carrots, cucumber, red bell pepper, avocado, and cilantro.

Drizzle with the creamy sriracha sauce and serve right away.
Notes
If using for meal prep, do not assemble into bowls. Add the rice, seasoned ground turkey meat, and shredded carrots to your containers and cover with lids. Store cucumber, bell pepper, avocado, and cilantro separately for best freshness.When ready to eat, heat the rice, meat, and carrot mixture. Add the remaining vegetables and drizzle with the sriracha sauce. Store in airtight containers in the refrigerator for up to 3-4 days.
