Grilled Salmon with Black Bean Salsa. With the combination of salmon, black beans and avocado, this was a meal in itself. No side dish needed! Delicious!
Place the salsa in the refrigerator until ready to use.
For the Salmon
Heat up the grill or frying pan. See note below. *
1 pound Salmon
Brush both sides of the salmon with olive oil.
1 tablespoons Olive Oil
Season the top of the salmon filets with salt, pepper, and cumin.
½ teaspoon Salt, ¼ teaspoon Pepper, ¼ teaspoon Cumin
Place the salmon, skin side down, on the grill, or in the heated skillet and cook for about 8 - 10 minutes. I close the lid on the grill while it is cooking. You can also cover the skillet with a lid. **
Plate the salmon and top with the black bean salsa.
Notes
*Heat the grill or frying pan. For the countertop grill, I place the setting to high. On the outdoor grill, I use a medium high setting. I also use a medium to medium-high setting on the stove top. This will give you a crispy skin on the bottom, and tender flakey fish on top.**Salmon is done when it is cooked to about 130° Fahrenheit. It will be dry if it is overcooked.
