These Chocolate Chip Orange Muffins are made with fresh orange zest, juice, and chocolate chips for a delicious, easy treat. Perfect for breakfast or snacks!
Line a 12-cup muffin tin with paper liners or lightly coat the cups with non-stick spray.
In a large mixing bowl whisk together the oil, egg, sugar, yogurt, orange zest, orange juice, and vanilla.
Place a wire strainer over the bowl and add the flour, salt, and baking powder. Sift into the bowl. Or, mix the dry ingredients together in a separate bowl before adding to the wet ingredients.
Stir in the chocolate chips.
Using an ice cream scoop or measuring cup, divide the batter into the 12 cup muffin pan.
Mix the remaining orange zest and sugar together. Sprinkle the sugared zest over the tops of the muffins.
Bake muffins for 16 – 20 minutes, or until a toothpick comes out clean when inserted in the middle of one of the muffins.
Cool slightly. Enjoy!

Zest the oranges before juicing.On average, you will get ¼ cup of orange juice and 1-2 tablespoons of orange zest per orange.Store the muffins in an airtight container for up to 3 days. Place in the refrigerator to keep fresher longer. Freeze in a Zip-Loc freezer bag for up to 3 months. Thaw at room temperature or microwave for 20-30 seconds.You can use prepared orange juice but fresh is best. The fresh orange zest adds a lot of flavor to this recipe. Use a fork when mixing the orange zest and sugar for the topping. By pressing the zest into the sugar, it releases more of the orange oils.
