For the crumb toppins
Dash of Cinnamon and Nutmeg
Peel and cube yams. Place them in a saucepan and boil until fork tender.
Drain and return to the pan. Mash the potatoes and add the butter, orange juice, brown sugar, salt, cinnamon, cloves, nutmeg, and vanilla. Whip all the ingredients together.
Put in a casserole dish that has been coated with non-stick spray.
In a small bowl mix the flour, brown sugar, butter, cinnamon, and nutmeg. Sprinkle crumb topping over whipped yams.
Bake in a 375-degree oven for 35-40 minutes, until crumb topping is golden brown.
This recipe makes about 6-8 servings and can be easily doubled for larger groups. The Yummy Yams can be made the day before needed. Just add crumb topping and bake before serving.
