My daughter's review of this Chocolate Marble Banana Bread... "It was very good. The texture and taste was amazing and the marble effect was really cool!"
Pre-heat oven to 375 degrees. Coat an 8" x 8" baking dish with non stick spray. Set aside.
In a large bowl mash the bananas. Add the eggs, oil, applesauce, sugar and vanilla. Mix well.
Add in the flour, baking powder, baking soda, salt and spices. Mix until well combined.
Put most of the batter in the baking dish, reserving about 1 - 1 ½ cups of mixture
Add the cocoa to the remaining batter. Stir well.
Drop dollops of the cocoa batter into the baking dish. Use a knife to swirl the chocolate batter into the banana batter to make the marble effect.
Bake the Chocolate Marble Banana Bread for about 45 - 55 minutes or until a toothpick comes out clean when inserted into the center of the bread.
Let cool slightly and enjoy!
Notes
* I used a ⅓ of a cup of cocoa powder and it tasted great. However, the cocoa batter was a little thick and it didn't get the marble effect I was looking for. Next time I might reduce the amount of cocoa to ¼ cup or maybe even add a little extra applesauce to loosen up the batter a bit.
