Spiced Cranberry Skillet Cake is a perfect dessert, snack, or maybe even coffee cake if you prefer something not too sweet. The fresh cranberries definitely add a bit of tartness to the yummy cake.
Lightly grease a 9″ cast iron skillet or other oven-safe skillet or pan.
In a medium-size bowl, combine the cranberries with the walnuts.
In a large bowl, mix the flour, granulated sugar, baking powder, salt, and spices.
Add a few tablespoons of the flour mixture to the cranberries and stir to coat the cranberries and walnuts.
Beat the melted butter with the eggs and vanilla.
Add the butter and egg mixture to the dry ingredients. Stir until thoroughly combined.
Fold in the cranberry and walnut mixture.
Pour the Spiced Cranberry Cake batter into the prepared skillet.
Bake the cake for about 40 minutes, or until a toothpick inserted in the center, comes out clean. (You may need to adjust the baking time if you are not using a cast-iron skillet. I would start watching it at about 30 minutes.)
Let the Spiced Cranberry Skillet Cake cool slightly before serving.
