These delicious Peanut Butter Cookies are light and a little crisp on the outside, a little chewy on the inside. An old recipe passed to another generation.
In large mixing bowl beat the butter, oil and sugars with a hand mixer until creamy. Add the eggs, peanut butter, and vanilla and continue to beat until completely mixed together.
Add the flour mixture to the peanut butter mixture and combine using a wooden spoon. Form cookie dough into balls (I used a cookie scoop that holds about 1 tablespoon of batter) and place on a cookie sheet. Press each cookie slightly in a crisscross pattern with a fork that has been dipped in sugar.
Bake cookies in a 350 degree oven for about 12 - 15 minutes.
