Warm a skillet over medium-low to medium heat. Since these pancakes have a little sugar and molasses in them you want to make sure that the pan doesn't get too hot or the pancakes could burn.
Mix together the ingredients listed above.
Pour ¼ cup of batter into skillet for each pancake. Cook until the edges of the pancake start to get firm and bubbles form on top. Flip over and continue cooking for 1 ½ - 2 minutes, until the pancakes are done.
Serve with maple syrup and whipped cream if desired. You can also sprinkle a little bit of the gingerbread spice mix over the top.
