- 4 - 6 cups of ripe Peaches peeled (if desired) and sliced
- 1 - 1 1/2 tablespoons Cornstarch
- 1 teaspoon Cinnamon
- Dash of Nutmeg
- 1 cup All-Purpose Flour
- 1 cup Sugar
- 1/2 teaspoon Salt
- 1 teaspoon Baking Powder
- 1 cup Milk plus 1 tablespoon Lemon Juice or 1 cup of Buttermilk
- 2 tablespoons Butter melted
Peel and slice 4 - 6 cups of ripe peaches and place in a bowl. Add 1 tablespoon of cornstarch for 4 cups of peaches, 1 1/2 tablespoons for 6 cups. Also, add 1/2 teaspoon cinnamon and a dash of nutmeg. Stir well. Place the peaches in a skillet or baking dish that has been oiled or sprayed with non-stick spray.
If you are not using buttermilk, add the lemon to the milk and set aside for a few minutes.
In a bowl mix together the flour, sugar, baking powder, salt, 1/2 teaspoon of cinnamon, and a dash of nutmeg. Add the buttermilk (or lemon milk) and the melted butter. Stir. Pour the batter over the peaches.
Bake the cobbler in a 350 degree oven for 45 - 50 minutes, or until bubbly and golden brown.
Let cool slightly, but it is best served warm. Serve with vanilla ice cream or vanilla frozen yogurt.
