In a medium to large mixing bowl, whisk the egg. Next, add the canola oil, molasses, milk or buttermilk and mix well. Whisk in the brown sugar.
Add the bran cereal and stir well to coat. Let the cereal set for a couple of minutes.
Meanwhile, prepare the muffin pan by lining it with muffin papers or coating well with non-stick spray.
To the cereal mixture, add the flour, baking soda, salt, and raisins. Stir until combined.
Scoop the batter into the muffin pan.
Bake the Molasses Bran Muffins for 16 – 20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
Cool and enjoy!
Notes
After baking... Let cool a minute or two and remove the muffins from the muffin pan to cool on a wire rack. Using the paper muffin liners, the muffins will stick to the paper until they cool a bit.
