Zucchini Bread Muffins

This recipe is a perfect choice when craving Zucchini Bread, but you don't want to wait an hour for it to bake.

Use ground  flax seed (optional) for a slightly nutty flavor. 

Ingredients - Flour - Sugar - Baking Powder - Baking Soda - Salt - Cinnamon - Applesauce - Eggs - Canola Oil - Vanilla - Flax - Zucchini

Mix together the wet ingredients

Add the dry ingredients. Mix. 

Fold in the shredded, prepared zucchini.

Pour the batter into a muffin greased muffin pan. Bake.

Cool slightly and remove muffins from the pan.
