Spiced Cranberry Skillet Cake is a perfect dessert, snack, or maybe even breakfast cake if you prefer something not too sweet. The fresh cranberries add a bit of tartness to the yummy cake.
2 cups Cranberries
½ cup Walnuts
1 cup all-purpose Flour
¾ cup Sugar
1 tsp Baking Powder
½ tsp Salt
½ tsp Cinnamon
½ tsp Allspice
¼ tsp Ginger
¼ tsp Cloves
½ cup Butter
2 large Eggs
1 tsp Vanilla
¼ cup Powdered Sugar
In a medium-size bowl, combine the cranberries with the walnuts.
Add a few tablespoons of the flour mixture to the cranberries and stir to coat the cranberries and walnuts.
In a large bowl, mix the flour, granulated sugar, baking powder, salt, and spices.
Beat the melted butter with the eggs and vanilla.
Mix the butter and egg mixture with the dry ingredients.
Fold in the cranberry and walnut mixture.
Pour the cranberry cake batter into a prepared skillet.
Bake the cake for about 40 minutes.
Let the Spiced Cranberry Skillet Cake cool slightly.
Dust with powdered sugar if desired.
