Cut the stew meat into 1 inch x 1 inch pieces. Place the meat in a hot Dutch oven with oil.
Cook the meat until well browned. Add the onion along with salt and pepper. Deglaze the pan.
Add the liquids and herbs. Simmer until the stew meat is fork tender.
Mix the dumpling batter and cook. Serve the dumplings topped with the stew meat and gravy.
