Trying to come up with an idea for something different for dinner, I came across a recipe for a Tilapia Sandwich in a recent issue of Costco Connection magazine. We had some tilapia in the freezer so I decided to give the recipe a try. Here is my version of Tilapia Sandwich with Fresh Citrus Sauce.
Here are a few of the differences between their recipe and mine. First of all, I didn’t have any chives, so I used some really finely chopped red onion instead. Also, I decided to use some fresh spinach in place of leaf or iceberg lettuce.
So yummy!
In their recipe the used brioche buns, I used plain ol’ kaiser rolls. I also adjusted a couple of the seasonings in the sauce. (This sauce is awesome with the tilapia and I can’t wait to try it with other fish!)
This seafood sandwich was absolutely delicious! A perfect, simple, warm weather meal, that I look forward to having again soon.
Tilapia Sandwich with Fresh Citrus Sauce
Fresh Tilapia Fillets
1 Lemon, juiced and zest removed
1 cup Mayonaise
¼ cup Ketchup
2 tablespoons Red Onion, very finely chopped
Salt and Pepper to taste
Dash of Hot Sauce, if desired
Canola Oil
Buns
Fresh Spinach
Sliced Tomato
Sliced Red Onion
Reserve about 1 tablespoon of lemon juice to brush on the tilapia.
Mix together the mayo, ketchup, remaining lemon juice, lemon zest, red onion, and hot sauce. Salt and pepper to taste. Set sauce aside.
If they tilapia fillets are large, cut in half. Brush the fillets with oil and sprinkle with salt and pepper.
Heat a large skillet over medium to medium-high heat. Sear the fish about 3 minutes per side, until done. Drizzle lemon juice over the cooked fillets.
Spread some of the sauce over the bun (toast the bun first if desired). Layer the sandwich… spinach, fish, tomato, onion.
Enjoy!
