I found a box of Angel Food cake mix in the cabinet that had just reached its “use by” date. I wasn’t in the mood for plain Angel Food cake, but I needed to use it soon. This Pumpkin Spice Angel Food Cake with Maple Glaze & Candied Pecans is what I came up with.
Just by adding a few fall flavors, this plain Angel Food cake mix turned into something awesome!

And that maple glaze! Double yum!
Finally, the cake is topped with candied pecans… I am ready for a piece!
Pumpkin Spice Angel Food Cake with Maple Glaze & Candied Pecans
For the Cake
Add 2 teaspoons of Pumpkin Pie Spice to a boxed Angel Food cake. Mix and bake according to the directions on the package.
In a medium size skillet over medium heat add 1-2 teaspoons of butter, 1/2 cup chopped pecans, and 2 – 3 tablespoons of sugar. Stir until the sugar melts and the pecans are coated. This will take several minutes. Pour the pecans out onto a piece of wax paper to cool. Break apart any pieces that are stuck together. Cool.
For the Maple Glaze
2 cups Powdered Sugar
1 teaspoon Maple Flavoring
Milk (just enough to get the right consistency)
Put the powdered sugar and maple flavoring in a bowl. Add 1 -2 tablespoons of milk and stir well. Continue to add milk or powdered sugar, and stir until the glaze is thick enough so it doesn’t all run off the cake, but thin enough so it will drip down the sides of the cake slightly. Use a spatula to move the glaze towards the edge of the cake so it will drip down the sides. Sprinkle with pecans immediately. Enjoy!
