Pumpkin French Toast

This time of year I always seem to have some leftover canned pumpkin from making muffins, pancakes, milkshakes, etc… Today I decided to try Pumpkin French Toast. It was delicious!

I used a combination of pumpkin, spices, a little maple syrup and a bit of whipped cream… Yum! The kids went crazy for it!

We absolutely love French Toast. So, when the weather cools off, warm seasonings like cinnamon, nutmeg, ginger, and cloves are a perfect match to go with the mood of a cool fall morning. Or evening! After all, breakfast for dinner is always a welcome treat!

I started with this Italian Pugliese bread I bought at Costco. It was a couple of days old and getting a little dried out. I think this would be good with any bread that has a hard crust. Actually, this recipe would probably be good with any bread that you would normally make French Toast with.

To make the French Toast dipping batter, in a pie plate mix together the eggs, milk, pumpkin, pumpkin pie spice, and brown sugar.

It is always better to use a dish such as a pie plate for the dipping batter. It makes the job of dipping the bread a whole lot easier!

Then, cut the bread into slices about 3/4 to 1 inch thick. Dip both sides of the bread into the egg mixture and put them into a pan that has been heated over medium to medium-high heat. Some people put butter in the pan first when making French Toast or pancakes but I never do. You can easily add a dab of butter first if you prefer.

After a couple of minutes, when the Pumpkin French Toast is getting a nice golden brown, flip them over and cook another couple of minutes.

Doesn’t this Pumpkin French Toast look delicious? This recipe is a perfect family breakfast on any cool, fall morning.

To Make Pumpkin French Toast

8 slices of Crusty Bread (or a bread of your choice)
2 Eggs
1 tablespoon canned Pumpkin
2 tablespoons Milk
1 teaspoon Pumpkin Pie Spice
2 teaspoons Brown Sugar

Cut the bread into 3/4 to 1-inch slices.

Preheat a pan over medium to medium-high heat.

Mix together the eggs, pumpkin, milk, pumpkin pie spice, and brown sugar. Dip both sides of the bread into the egg mixture and put into the preheated pan. Cook for a couple of minutes until golden brown. Flip over the French Toast and cook for a couple more minutes,

Serve with maple syrup. Enjoy.

  • Cook for a couple of minutes until golden brown. Flip over the french toast and cook for a couple more minutes,
  • Serve with maple syrup and whipped cream. Enjoy.
