Tis the season for everything pumpkin. Here is my recipe for Pumpkin Chocolate Chip Muffins. These muffins make a nice afternoon snack or a quick light breakfast.
|Pumpkin Chocolate Chip Muffins|
Mini chocolate chips are the perfect touch for these light and airy pumpkin muffins.
Flour, white and brown sugar, baking powder and soda, pumpkin pie spice, pumpkin, eggs, oil, and of course, chocolate chips.
Mix together the flour, baking powder, baking soda, and pumpkin pie spice. Set aside.
|Liquids and Sugars|
Beat the eggs and then add the oil and pumpkin. Mix well. Blend in the white and brown sugars. You could use a hand mixer, but I just used a whisk and it worked fine.
|Mini Chocolate Chips|
Toss in some chips. I used the mini ones, but use whatever you like. You can even skip this part, although I never pass up an opportunity to add chocolate.
Scoop into muffin pan
The best way I found to scoop muffin batter into the pan is with an ice cream scoop. One scoop is usually the perfect amount for a regular size muffin. I use a cookie scoop when making mini muffins.
