I decided to spice up an old bran muffin recipe and I came up with these Pumpkin Chocolate Chip Bran Muffins.
I’m not sure how healthy they are but they are definitely a tasty way to add a little bit of fiber to your diet. I have been making bran muffins from All-Bran cereal for years. Today I tried something different. I added some pumpkin, spices, and a few chocolate chips. The result was delicious!
Pumpkin Chocolate Chip Bran Muffins
2 cups All-Bran Cereal
3/4 cup Milk
1/2 cup Pumpkin
1/4 cup Canola Oil
1/2 cup Brown Sugar
1 cup Flour
1 tablespoon Baking Powder
1/2 teaspoon Salt
2 1/2 teaspoons Pumpkin Pie Spice (or to taste)
1/2 cup mini Chocolate Chips (optional)
In a bowl mix together the milk, pumpkin, egg, canola oil and brown sugar. Add the cereal, stir well, and let set for a few minutes.
Add the flour, baking powder, salt, and pumpkin pie spice to the bran cereal mixture. Stir until combined. Fold in chocolate chips.
Scoop muffin batter into a 12 cup muffin pan that has been sprayed with non-stick spray. An ice cream scoop is a handy tool for this.
Bake muffins in a 375 degree oven for 18-20 minutes or until a toothpick comes out clean when inserted into the middle of one of the muffins. Enjoy!
* Homemade Pumpkin Pie Spice
1 tablespoon Cinnamon
1 teaspoon Nutmeg
1 teaspoon Ginger
3/4 teaspoon Allspice
