    Mango Cranberry Peanut Butter Bites

    These Mango Cranberry Peanut Butter Bites are no-bake and a perfect snack to keep in the refrigerator for the kids and the entire family!

    My daughter and I love these little snacks. We usually make them with oatmeal, peanut butter, chocolate chips and maybe a little ground flax seed throw in. Last night we were looking for a quick treat and we decided to make a batch. Since I had just bought some dried fruits, we first thought of doing something a little tropical with mango and coconut. After sampling them my daughter insisted that they were too tropical and that we needed to add cranberries too!

    And chocolate chips of course! "They need more chocolate chips, mom!" That's my girl!

    Delicious, and even with the chocolate chips, they are a snack I feel good about her eating.

    Here is our recipe for Mango Cranberry Peanut Butter Bites.

    Mango Cranberry Peanut Butter Bites

    ½ cup Peanut Butter (we use creamy)

    ⅓ cup Honey

    Dash of Salt

    ½ teaspoon Vanilla

    2 cups Old Fashioned Oats

    ¼ - ⅓ cup Dried Mango, diced

    ½ cup Toasted Coconut

    ⅓ cup Dried Cranberries

    ½ cup  Chocolate Chips, mini or slightly chop regular size

    In a large bowl mix together the Peanut Butter, Honey, and Salt. Add the remaining ingredients and mix until well combined. The Mango is really sticky, so you might have to use your hands to separate the pieces a bit.

    Pack the Bites firmly in a cookie scoop, or roll into balls. Place on a cookie sheet covered with parchment paper. Place in the refrigerator for 30 minutes or so, until firm. Then put the Mango Cranberry Peanut Butter Bites in a covered bowl and store in the refrigerator.  You should have between 25 - 30 bites, but if you snack as you are preparing these as we do...  Enjoy!
