Not in the mood for a hot coffee drink even though it is cool outside?
Give this Frozen Pumpkin Latte a try. Yum!
Freeze the pumpkin puree in an ice tray. Each cube equals about 1 tablespoon (4 would equal 1/4 cup). I also keep some frozen coffee cubes and milk cubes in a container or ziploc baggie in the freezer for coffee drinks or smoothies.
Frozen Pumpkin Latte
1 cup Milk
3 Pumpkin Puree Ice Cubes
3 Coffee Ice Cubes
1 tablespoon Brown Sugar
1/2 – 1 teaspoon Pumpkin Pie Spice
Put all ingredients in a blender or use the magic bullet if you have it. Adjust the ice cubes to taste (I like more coffee, my son likes more pumpkin). If you want it icier (is that a word?), toss in a couple of milk ice cubes. Top with whipped cream. You can also sprinkle some dried orange peel or cinnamon over the top. This recipe makes a single serving.
