Need a simple veggie idea to throw on the BBQ? This easy recipe for Foil Wrapped BBQ’ed Zucchini not only tastes great, the clean up is a piece of cake!
It’s summertime. The weather is warm and you are using the grill more often. I don’t know about you, but when it is hot outside, I don’t always feel like cooking. This Foil Wrapped BBQ’ed Zucchini is a perfect veggie side dish to throw on the grill and it is ready in no time at all.
Foil Wrapped BBQ’ed Zucchini
Slice up some Zucchini in about 1/2″ slices.
Drizzle a little Olive Oil onto a piece of foil. You can use one large packet, or several small ones for individual serving sizes.
Place Zucchini in center of the foil.
Place several dabs of butter on top of Zucchini if desired.
Sprinkle with some salt and/or your favorite seasoning. Italian Seasoning or Garlic and Herb work well.
Lightly toss everything together.
Seal up foil to close packet. There is an example of how I do it in my Salmon Cook on the Grill post.
Place the packet on the grill or bbq over direct heat. It should take about 12 – 15 minutes to cook. Leave it a little less time if you like your Zucchini crisper, or a little more time for a softer result.
Remove foil packet from grill and open carefully!
Tastes great and no mess to clean up!
