It is Spring Break and both of the kids are home this week. I have been busy painting my daughters room while she is busy fighting a cold. My son has been busy with basketball, helping me when he can, and just hanging out with friends. I threw this recipe for Fajita Seasoned Ground Beef with Pasta together yesterday for a quick lunch.
My son and I just about devoured it all. We didn’t even bother to sit down. We fixed up our plates, stood in the kitchen, and chatted while we ate.
I usually have most of these ingredients on hand anyway, and I am so glad I had recently bought some fresh avocados. This was a quick and delicious meal to throw together that will definitely go into our dinner rotation.
Fajita Seasoned Ground Beef with Pasta
1 lb. Ground Hamburger
1 cup Onion, chopped
½ Green Bell Pepper, chopped
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
1 teaspoon Cumin
½ teaspoon Smoked Paprika
1 teaspoon Chili Powder
½ teaspoon Oregano
Salt, to taste
Dash or two Cayenne Pepper
½ cup Sour Cream
3-4 servings Pasta, cooked
Sour Cream
Shredded Cheese
Salsa
Avocado
Put hamburger, onion, green bell pepper, and seasonings in a pan over medium heat. Crumble and cook until the ground beef is cooked through. Drain any excess grease if necessary. Add the ½ cup of sour cream and pasta. Stir well. Serve topped with cheese, salsa, avocado, and more sour cream if desired.
*You can also use your favorite Fajita Seasoning Packet Mix in place of spices listed above.
