These Chocolate Waffles with Triple Berry Sauce would be great for a weekend breakfast, brunch, or dinner (or a combination dinner and dessert).
Did you ever have one of those nights where you need to fix dinner but don't really feel like it? I wandered through the kitchen for a bit, then I opened the freezer and found a bag of triple berry blend frozen fruit that needed to be used up. My kids love the sauce I make from frozen berries, and we haven't had breakfast for dinner in awhile. So... here we go.
I used a triple berry blend. This works just as well with just strawberries or just blueberries, or whatever your favorite berry is. Put the frozen berries, about 4 cups worth, in a saucepan over medium heat. Add about ¼ cup of water.
You are going to need about ½ cup of sugar and 1 Tablespoon of cornstarch.
After I measure the sugar, I add the cornstarch to the measuring cup and mix it together.
Add the sugar and cornstarch to the berries and bring to a boil, stirring often, over medium heat.
Bring the mixture to a boil. Within a couple of minutes, you will notice the sauce starts to become clear and thicken.
Now, it is time to remove the sauce from heat. Add about 1 teaspoon of lemon juice if you have it on hand. Let the berry sauce cool slightly.
Time to start the waffles. I used Bisquick, Cocoa Powder, Sugar, Egg, Oil, Milk, and Vanilla.
Put all the dry ingredients in a bowl and whisk together.
Add the liquids and stir just until blended.
Cook the waffles according to your waffle makers directions.
