No doubt about it, this recipe is a winner with my family. Who doesn't like Rice Krispies Cookies? Although the original recipe is great, there is nothing wrong with changing it up a bit. Here is a simple recipe for Chocolate Raspberry Rice Krispies Cookies.

    Chocolate Raspberry Rice Krispies Cookies

With the addition of some dried raspberries and dark chocolate, you have a whole new cookie. Plus, they are the perfect treat to make for your special someone for Valentine's Day.

    Chocolate Raspberry Rice Krispies Cookies

It all started with a recipe I pulled out of a magazine. They had added cocoa powder and dried cherries. That sounded good, but I just happened to have a bag of dried raspberries I purchased at Target.

    Chocolate Raspberry Rice Krispies Cookies

I thought I would put some dark chocolate on top instead of mixing in cocoa powder, Delicious!

    Chocolate Raspberry Rice Krispies Cookies

Put the Chocolate Raspberry Rice Krispies Cookies in the refrigerator to cool completely and allow the chocolate to set up. Cut into squares, serve and enjoy!

    ...

    Chocolate Raspberry Rice Krispies Cookies

    6 cups Rice Krispies Cereal
    10 ounces Marshmallows
    3 tablespoons Butter
    Dash of Salt
1 cup or so Dried Raspberries
1 cup or so Dark Chocolate Chips
    Milk
    1 cup Powdered Sugar

    Spray non-stick spray on a 13 x 9 baking dish.

Heat a large pan over medium heat. First of all, add the butter and marshmallows and stir until melted. Add the salt, stir and remove from heat.

Next, add the cereal and dried raspberries. (I crushed my raspberries first for smaller pieces) Stir well and pour into baking pan. Grease hands with non-stick spray or butter and press the cookies until even.

Sprinkle dark chocolate chips over top of cookies. Put the baking dish under the broiler for a minute or two. Remove from oven. You should be able to easily spread the melting chocolate over the cookies.

Mix the powdered sugar with a small amount of milk. Start with about 1 tablespoon. Drizzle over the top of the cookies. Let cool completely before serving.
