I came up with this idea the other night when I was looking for something quick and easy for dinner. My son and husband loved it! It has the flavors of Chicken Parmesan, and is put together kind of like I do my Spaghetti Sauce. To me spaghetti sauce gets better the next day, this recipe is much better the first day. The chicken dried out a little bit when we re-heated it. On that first night though, it was very good.
Is it a simplified Chicken Parmesan or a Chicken Spaghetti Sauce?
Looks like the ingredients for spaghetti sauce, well, except for those chicken breasts.
|Cube up Chicken Breasts|
Cube up the chicken breast. This is the messiest part of this dish.
Heat a pan over medium heat, add olive oil, and a chopped onion. Cook the onion for a little bit.
|Cook the Chicken|
Add the chicken to the onions. Also add the Italian Seasoning, red pepper flakes, salt and pepper.
|Chicken is Almost Done|
When the chicken is almost done, add some garlic and cook for a minute.
|Add Tomato Sauce|
Then add some tomato sauce and diced tomatoes. Let the sauce cook down for a little while. This is a good time to work on the rest of the meal. Go ahead and get the spaghetti cooking.
Grate some cheese. I am using Mozzarella and Parmesan.
|Crush some Croutons|
Crush some croutons in a sandwich bag. These butter and garlic croutons added a nice touch to the dish.
|Sauce is Done|
When the sauce has cooked down a bit it is time to assemble the dish.
|Chicken Parmesan Spaghetti Sauce|
Put the spaghetti on your plate. Top with the sauce, cheese, and some crushed croutons. Serve with a side salad and garlic bread if you wish. Delish!
Chicken Parmesan Spaghetti Sauce
2 – 3 Chicken Breasts, cubed
1 Onion, chopped
1 tablespoon Italian Seasoning
1/4 – 1/2 teaspoon Red Pepper Flakes, to taste
Salt and Pepper, to taste
1 heaping teaspoon Garlic, chopped
1 can Tomato Sauce
1 can Diced Tomatoes
Heat a pan over medium heat. Add olive oil to the pan, and the chopped onion. Cook the onion slightly. Add the cubed chicken breast, Italian seasoning, red pepper flakes, salt and pepper. Cook until chicken is almost done. Add the garlic and cook another minute. When the chicken is done, add the tomato sauce and diced tomatoes. Simmer until sauce thickens a bit.
Grate some cheese and crush the croutons. Serve sauce over spaghetti, and top with grated cheeses and crushed croutons.
