We love lemon! I have been wanting to blog a recipe for lemon cookies for a long time, so finally, here it is. These delicious Chewy Lemon Cookies were a big hit with the kids, husband, and me!

They are a chewy and soft cookie made with lemon pudding mix.
Top these wonderful cookies off with a slightly tart lemon glaze made with fresh lemon, and... wow! Yum!

Using a box of lemon pudding mix and a bit of lemon extract give these cookie a fabulous texture and taste.
Powdered sugar mixed with freshly grated lemon rind and lemon juice makes the perfect glaze to top off your cookies.
Chewy Lemon Cookies
¼ cup Butter, softened
¼ cup Canola Oil
⅓ cup Sugar
1 Egg
½ teaspoon Lemon Extract
1 Small Box Lemon Pudding Mix
½ teaspoon Salt
½ teaspoon Baking Soda
1 cup + 2 tablespoons Flour
1 cup Powdered Sugar
Rind and Juice from 1 Lemon
Pre-heat oven to 350 degrees.
Beat together the butter and canola oil until creamy. Add the sugar, egg, lemon extract, and pudding mix. Mix well. Stir in the flour, salt, and baking soda.
Scoop the cookie batter onto a cookie sheet. Bake the cookies in a 350-degree oven for about 12 minutes.
Mix together the powdered sugar and lemon rind in a small bowl. Start adding the lemon juice until you reach the consistency you want for your cookies.
Drizzle the glaze over the cooled cookies. Enjoy!

- 1 cup Powdered Sugar
- 1 Lemon juice and zest
Instructions
- Pre-heat oven to 350 degrees.
