I started working on a recipe for Sweet Cardamom Rolls for my husband. He has fond memories of his grandmother, who was from Finland, singing while kneading dough in the kitchen. He talks about how much he loved the smell of the bread and cardamom. I have made several adjustments from my first attempt at this, and I may continue to adjust, but everyone really enjoys this recipe as is.

In the mixing bowl, add the yeast, milk/butter, eggs, sugar, salt, cardamom and whisk together. Using the dough hook, start mixing 3 cups of flour with the liquids. Gradually add another 1 to 1/2 cups of flour. The dough will still be sticky, but will start to gather around hook.Warm 1/4 cup water to 105 – 110 degrees. Add 2 1/4 teaspoons of yeast and let set about 5 minutes. Have eggs and butter at room temperature. Warm 3/4 cup milk slightly (I used the microwave, takes about 30-45 seconds for me). Add 1/4 cup butter to the milk and let set until the butter melts in the milk.
Put the dough on a floured surface and knead for about 2-3 minutes. Add a little flour if needed, just enough to keep from sticking. Put the dough into an oiled bowl, flip the dough over so that the top is now also covered with oil. Cover and let set until double in size.
Working on a floured surface, split the dough into 2 sections. Using 1 section at a time, flatten dough slightly as shown. Then cut in half, then quarters, then each quarter into thirds. Take the 12 pieces of dough and roll into ropes. Swirl the ropes to make the rolls.
Put the rolls onto a cookie sheet or baking pan that has been covered with parchment paper. I sprayed the parchment with some non-stick spray just to make sure they don’t stick. Let raise. Repeat with other section of dough.
Or, you can divide each section of dough into thirds and make a braided loaf.
Bake the dough in a 350 degree oven for 15 – 20 minutes. The braided loaf might take a little longer.
Glaze the Sweet Cardamom Rolls if desired. Mix 2 cups of powdered sugar to about 2 tablespoons or so of milk to get the consistency you like.

1/4 cup warm Water, 105 – 110 degrees
2 1/4 teaspoons Yeast
3/4 cup Milk, warmed
