½cupFrozen Orange Juice Concentratethawed and undiluted
½cupOrange JuiceI used fresh squeezed
2tablespoonsSoy Sauce
1tablespoonOlive Oil
2tablespoonsBrown Sugar
3tablespoonsFresh Gingerminced
3clovesGarlicminced or finely chopped
½teaspoonSalt
¼teaspoonPepper
Instructions
Use a container or large Zip-loc bag and add the chicken wings.
Mix all the marinade ingredients and pour it over the chicken wings.
Store the wings in the refrigerator for several hours up to several days. If using a Zip-loc bag, turn the bag every so often that the chicken wings get well covered by the marinade.
Preheat the oven to 400 degrees. Line a baking pan with foil and coat well with oil or non-stick spray.
Place the wings on the baking sheet making sure not to overcrowd them.
Reserve the marinade for now.
Bake the wings for 25-30 minutes, and then remove the pan from the oven. Flip the wings over and brush with a coat of the reserved marinade.
Throw out any remaining marinade.
Bake the wings for an additional 20 - 25 minutes until they are browned and cooked thoroughly. Chicken is done when it reaches 165 degrees F.
Carefully remove the chicken wings from the baking sheet (they are a little bit sticky) and serve. Enjoy!
Notes
Ginger and garlic in the jar would also work, but fresh is usually more flavorful. Fresh squeezed or bottled orange juice would work fine. This recipe is best when one of those juices is combined with the frozen juice concentrate.
