Easy Smoked Sausage Jambalaya
Because most of the ingredients can probably be found in your pantry, this Easy Smoked Sausage Jambalaya makes a great dinner on a busy weeknight.
  • 2 tablespoons Olive Oil
  • 14 ounces Smoke Sausage, cut into bite size pieces
  • 1 cup Onion, chopped
  • 1 cup Green Bell Pepper, chopped
  • 1 teaspoon Creole Seasoning
  • Salt & Pepper, to taste - if desired
  • 1 Bay Leaf
  • 1 can (14½ ounces) Diced Tomatoes with Green Chiles
  • 1 can (14½ ounces) Chicken Broth
  • 1 cup Water
  • 1½ cups Long-Grain Rice
  1. Prepare the onion, bell pepper, and sausage while heating a large skillet over medium to medium high heat.
  2. Add the olive oil, onion, green pepper and sausage to the heated skillet.  Cook for about 5 minutes stirring occasionally.
  3. Stir in the creole seasoning, salt & pepper and bay leaf. Stir and blend the spices for about 1 minute.
  4. Add the diced tomatoes, water, chicken broth and rice. Stir and to combine and bring the mixture to a boil. Next, reduce heat to medium low, then cover and cook for 20 minutes or until the rice is cooked.
  5. Remove the bay leaf and dinner is ready!
