Orange Pecan Bread
This Orange Pecan Bread is my take on an old recipe I found in my mom's recipe box. This recipe is easy and the bread is light and delicious.
  • 1 Egg
  • 6 tablespoons Orange Juice
  • Freshly Grated Orange Rind, optional
  • ¼ cup Sugar
  • 2 cups All-Purpose Flour, sifted
  • 4 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 2 - 3 tablespoons Orange Marmalade
  • ⅓ cup Butter or Shortening, melted
  • ½ cup Nuts, chopped (I use Pecans)
  • Glaze
  • ½ - 1 cup Powdered Sugar
  • Orange Juice
  • Orange Rind, optional
  1. Beat egg and add the orange juice, orange rind, and sugar. Mix well.
  2. Add the flour, baking powder and salt. Mix until combined.
  3. Next, add the orange marmalade, melted butter and pecans. *Stir well.
  4. Pour the batter into a bread pan that has been sprayed with non-stick spray. Let rest for about 30 minutes.
  5. Bake the Orange Pecan Bread in a 350 degree oven for about 40 minutes, or until a toothpick comes out clean when inserted into the center of the bread.
  6. Prepare the glaze by mixing just enough orange juice to the powdered sugar to get a thick but workable consistency. Add fresh orange rind if you have it. Spread the glaze over the bread while it is still warm.
  7. Let cool. Enjoy!
*Mom's directions said to knead the bread dough a few times, I found that the dough was much too moist to knead, so I just mixed it well in the bowl.
