Chewy Lemon Cookies
A box of lemon pudding mix & a bit of lemon extract give these Chewy Lemon Cookies a fabulous texture & taste. Top them off with a delicious lemony glaze.
  • ¼ cup Butter, softened
  • ¼ cup Canola Oil
  • ⅓ cup Sugar
  • 1 Egg
  • ½ teaspoon Lemon Extract
  • 1 Small Box Lemon Pudding Mix
  • ½ teaspoon Salt
  • ½ teaspoon Baking Soda
  • 1 cup + 2 tablespoons Flour
  • 1 cup Powdered Sugar
  • Rind and Juice from 1 Lemon
  1. Pre-heat oven to 350 degrees.
  2. Beat together the butter and canola oil until creamy. Add the sugar, egg, lemon extract and pudding mix. Mix well. Stir in the flour, salt and baking soda.
  3. Scoop the cookie batter onto a cookie sheet. Bake the cookies in a 350 degree oven for about 12 minutes.
  4. Mix together the powdered sugar and lemon rind in a small bowl. Start adding the lemon juice until you reach the consistency you want for your cookies.
  5. Drizzle the glaze over the cooled cookies. Enjoy!
