Quinoa with Tomatoes and Basil
Fresh tomatoes and basil are used to make this Quinoa with Tomatoes and Basil. A delicious light dinner or a perfect side dish.
  • 1 tablespoon Olive Oil
  • 1 cup Red Onion, chopped
  • 1 teaspoon Garlic, chopped
  • ¾ cup Quinoa
  • 1 can (14.5 ounces) Chicken or Vegetable Broth
  • 1 teaspoon Italian Seasoning
  • Salt and Pepper, to taste
  • Dash of Cayenne, optional
  • 1 - 1½ cups Tomato, diced
  • 1 - 2 tablespoons fresh Basil, chopped
  • Parmesan Cheese
  1. Warm up a sauce pan over medium heat. Add the olive oil, onion, and garlic. Stir and cook for several minutes, until the onion is softened.
  2. Add the Quinoa, broth, Italian seasoning, salt, pepper, and cayenne. Stir well and bring to a boil.
  3. Reduce heat slightly, cover and cook 15 - 20 minutes, until liquid is absorbed.
  4. Taste and adjust salt and pepper if necessary.
  5. Add the tomatoes and basil. Serve topped with Parmesan cheese.
