Simple Broccoli Casserole

Eating your veggies can get boring and sometimes you just need to doctor things up a bit. If you are dealing with picky eaters, this Simple Broccoli Casserole just might help you out.
  • 24 ounces of Broccoli (*see note)
  • 1 cup Sour Cream
  • 1 cup Shredded Cheese
  • 1½ teaspoons of Garlic 'n Herb Seasoning
  • Salt and Pepper to taste. (I didn't add any salt, but did add pepper)
  • 1 sleeve Ritz Crackers
  • 2 Tablespoons of Butter
  1. Cook the broccoli slightly in the microwave for about 4-5 minutes. You want the broccoli to be just starting to get tender, not mushy.
  2. In a large bowl combine sour cream, half of cheese, garlic 'n herb seasoning, and salt and pepper. Stir well to combine. Add drained broccoli and stir. Put broccoli into a casserole dish that has been spray with non-stick spray.
  3. Add the remaining cheese.
  4. Crush one sleeve of Ritz Crackers. Put the crackers on top of broccoli mixture. Put dabs of butter over crackers.
  5. Bake at 350 degrees until golden brown, about 25-35 minutes.
*Amount of broccoli measures about 6 cups before cooking in microwave, and about 4 cups afterward.
