Tilapia with Bacon Mashed Potatoes, Spinach, and Creamy Tomato Sauce

This Tilapia with Bacon Mashed Potatoes, Spinach, and Creamy Tomato Sauce is my version of a dish I had at Bubba Gumps Shrimp Co. in Monterey, CA.
Ingredients
  • 4-6 Tilapia Fillets
  • 6 slices Bacon
  • 5-6 Potatoes, peeled and diced
  • 1 large bag or bunch of Spinach
  • 2-3 Roma Tomatoes, diced
  • ¼ - ⅓ cup Onion, diced into small pieces
  • 2 cloves Garlic, chopped (for the sauce, or use garlic powder)
  • 2 tablespoons Heavy Cream
  • Olive Oil
  • Butter
  • Milk and/or half-n-half
  • Garlic Powder
  • Salt and Pepper
Instructions
  1. Fry the bacon until crispy, crumble, set aside.
  2. Peel, and dice potatoes. Cook until fork tender. Make mashed potatoes with butter, milk, salt and pepper. Set aside.
  3. Saute spinach in a little olive oil and butter. Sprinkle with garlic powder, salt and pepper. Set aside.
  4. Sprinkle Tilapia with garlic powder, salt and pepper. Cook in olive oil and butter until done. Mine took 3-4 minutes per side. When the fish is done, put on a plate, cover with foil and set aside.
  5. Slightly wipe out pan and add more olive oil if needed. Add onion and garlic, cook and stir for a minute or two. Add tomatoes, salt and pepper, stir. Add heavy cream, stir, sauce will start to thicken. Add more heavy cream, half-n-half, or milk to make sauce. Add as little or much as you like. Taste, and adjust seasoning if necessary.
  6. To assemble: Place mashed potatoes on plate, top with spinach, fish, and sauce. Serve.
