Basil 'n Curry Chicken

1½ lbs. Chicken (breast or thighs), cute into bite size pieces 8 ounces Mushrooms, sliced (optional) 1 tablespoon (or more) dried Basil Salt & Pepper 2-4 tablespoons Green Curry Paste, to taste (my family likes closer to 4 tablespoons) 1 can Coconut Milk ¼ Chicken Broth (optional) ¼ - ½ cup Fresh Basil, chopped
Ingredients
  • 1½ lbs. Chicken (breast or thighs), cute into bite size pieces
  • 8 ounces Mushrooms, sliced (optional)
  • 1 tablespoon (or more) dried Basil
  • Salt & Pepper
  • 2-4 tablespoons Green Curry Paste, to taste (my family likes closer to 4 tablespoons)
  • 1 can Coconut Milk
  • ¼ Chicken Broth (optional)
  • ¼ - ½ cup Fresh Basil, chopped
Instructions
  1. Start the rice if you are serving it with the Basil 'n Curry Chicken.
  2. Heat a pan over medium heat. Add a tiny bit of olive oil and the chicken, dried basil, mushrooms if using, salt and pepper. Cook until the chicken is almost done. If you are using chicken thighs, drain the oil before going on to the next step.
  3. Add the curry paste and stir for a minute or so.
  4. Add the coconut milk and chicken broth if using. Reduce heat and simmer for about 5 minutes or until chicken is done.
  5. Finally, add the basil just before serving. Serve with rice.
