Baked Apple Pancake
Inspired by my mother-in-law's Finnish baked pancake recipe, here is my version of a Baked Apple Pancake that my family enjoys.
  • 4 Eggs
  • 2 cups Milk
  • 2 tablespoons Butter, melted
  • 2 tablespoons Sugar
  • ½ teaspoon Salt
  • ½ teaspoon Vanilla, optional
  • 1½ cups Flour
  • 2-3 Apples, sliced (peeled if you like)
  • ½ cup Sugar
  • 3 teaspoons Cinnamon
  • 2 tablespoons Butter
  1. Pre-heat oven to 375 degrees.
  2. Put the eggs in a bowl and beat until thick and bright yellow. Add the milk, melted butter, 2 tablespoons sugar, salt, and flour. Mix until completely blended. Let the batter set 15 - 20 minutes. In the meantime you can prepare the apples.
  3. Coat a 13 x 9 baking dish with non-stick spray.
  4. Slice the apples, peel first if desired.
  5. Mix the ½ cup sugar with the cinnamon.
  6. Spread the apples in the baking dish. Sprinkle with the cinnamon sugar mixture and top with the dabs of butter.
  7. Pour the batter over the top, the apples will float around a bit.
  8. Put in the oven and bake for 40 - 50 minutes until golden brown.
