Corn Flakes Cookies

Corn Flakes Cookies are probably the first cookie that my mom ever taught my brother & I how to make. Really simple & you need just a few basic ingredients.
  • 2 Egg Whites
  • ½ cup Sugar
  • 1 teaspoon Vanilla
  • 3 - 4 cups Corn Flakes
  1. Beat the egg whites until they start to turn foamy. Gradually add the sugar and then the vanilla. Continue to beat until stiff peaks form. Gently fold in the corn flakes. If you are using small eggs, 3 cups of corn flakes may be enough. Today I used jumbo eggs, so I added 4 cups of corn flakes.
  2. Using 2 tablespoons, scoop batter onto greased cookie sheet. Bake in a 300 degree oven for 25 - 30 minutes. You do not want them to brown too much, but you want to bake them until they are no longer sticky. Cool cookies for about 1 minute before removing from pan.
  3. This recipe makes 18 - 24 cookies.
* I am sure my mom never set the oven as low as 300 degrees, but we had a very old oven that we were lucky worked at all. It is anyone's guess what the actual temperature really was.
