Chocolate Chip and Orange Muffins

Fresh orange juice and lots of chocolate chips! Works for me!
  • ¼ cup Canola Oil
  • 1 Egg
  • ½ cup Granulated Sugar
  • ½ cup Greek Yogurt (I used Vanilla, plain would work too)
  • ½ cup Orange Juice
  • Grated Orange Rind, from 1 large or 2 small Oranges
  • 1 tsp Vanilla
  • 1½ cups All Purpose Flour
  • ½ tsp Salt
  • 2 tsp Baking Powder
  • ½ - 1 cup Chocolate Chips
  1. In a large mixing bowl whisk together the oil, egg, sugar, yogurt, orange juice, orange rind, and vanilla. Add the flour, salt, and baking powder. Stir until combined. Stir in the chocolate chips.
  2. Line muffin tin with muffin papers, if desired, and fill each cup about ⅔ full with the batter. This recipe makes 12 muffins.
  3. Bake muffins in a 350 degree oven for 16 - 20 minutes, or until a toothpick comes out clean when inserted in the middle of one of the muffins.
  4. Cool slightly. Enjoy!
  5. *If you don't have enough orange juice from your orange(s), add a little milk to the juice to equal ½ cup.
