Simple Tiramisu Cupcakes with Mascarpone and Whipped Cream Frosting

  • 1 box White Cake Mix, plus ingredients listed on package
  • Strong Coffee or Espresso Powder
  • 8 ounces Mascarpone Cheese, softened
  • ¼ - ½ cup Powdered Sugar
  • 1 cup Heavy Cream
  • Cocoa Powder
  1. Prepare the cake mix following the directions on the box on how to prepare the batter, except you want to use Strong Coffee in place of the water. (I like using the powder Instant Espresso*.) Fill the muffin tins, bake, and let the cupcakes cool.
  2. To make the frosting, mix the Mascarpone Cheese and Powdered Sugar together until well blended. Add the Heavy Cream and mix until fluffy and stiff enough that it will hold its shape when you frost the cupcakes.
  3. Frost the cupcakes and I take a small strainer and add a little cocoa powder and lightly sprinkle it over the top of the cupcakes. Keep these stored in the refrigerator, in a covered container. They are so good!
*I put about ¼ cup of water in a glass measuring cup and heat until hot in the microwave. Add anywhere from 2 - 4 heaping teaspoons of the Instant Espresso. Stir well. Add more water to equal the amount your box mix calls for.

If you want more frosting, I am sure you could use 2 cups of heavy cream along with the 8 ounces of Mascarpone Cheese.
