Grilled Chicken and Pasta with a Creamy Tomato Sauce
The idea for this Grilled Chicken and Pasta with a Creamy Tomato Sauce started with a recipe I read on the back of a pasta box. The results were delicious!
  • For the Grilled Chicken...
  • 2 Large Chicken Breasts
  • 1 tablespoon Olive Oil
  • 1 teaspoon Italian Seasoning
  • ½ teaspoon Garlic Powder
  • Pinch of Red Pepper Flakes
  • Salt and Pepper
  • For the Sauce...
  • 1 cup Onion, chopped
  • 1 heaping teaspoon Garlic, chopped
  • Pinch of Red Pepper Flakes
  • 2 teaspoons Italian Seasoning
  • ½ teaspoon Garlic Powder
  • 1 can Diced Tomatoes
  • 1 can Fire Roasted Diced Tomatoes
  • 1 can Tomato Sauce
  • Salt and Pepper
  • 1 teaspoon Sugar
  • ⅓ - ½ cup Half 'n' Half
  • Fresh Basil
  • Parmesan Cheese
  1. Coat the chicken breasts with the olive oil, garlic powder, a dash of red pepper flakes, Italian Seasoning, salt and pepper.
  2. Cook the chicken on the grill over medium high heat, for a couple of minutes, give them a turn, and cook them for a minute or so more. Then turn the chicken over, and do the same on the other side. They will not be completely done at this point. Set them on a plate and let them rest.
  3. Saute the onions, garlic, red pepper flakes, and Italian Seasoning until the onions are soft. Add both cans of diced tomatoes, tomato sauce, salt, pepper, and sugar. Adjust seasoning to taste.
  4. Cube up the chicken and add it to the sauce. Let the sauce simmer and the chicken cook while you cook the pasta.
  5. When the pasta is ready, and the chicken is cooked through, add the pasta and half 'n' half to the sauce. Stir well. Turn off heat and add some fresh chopped basil.
  6. Serve with more fresh basil and Parmesan cheese.
