Summer Veggie Pasta with Sausage

Fresh tomatoes, zucchini and red onion added to smoked sausage and pasta. Top it off with fresh basil and Parmesan cheese. Delicious!
  • 1 -2 tablespoons Olive Oil
  • 1 Red Onion, chopped
  • 4 - 5 Roma Tomatoes, cut into bite size pieces
  • 2-3 (or more) cloves of Garlic, chopped
  • 1 Zucchini, cut into bite size pieces
  • Chopped Basil (I used about ½ of a bunch)
  • ¼ - ½ teaspoon Crushed Red Chilies (Red Pepper Flakes), if using
  • 4 Jalapeno Sausages (if using), cut into bite size pieces
  • Grated Parmesan Cheese
  • Salt and Pepper, to taste
  • Pasta of your choice
  1. Get a large pot of water boiling and cook the pasta.
  2. While the pasta is getting started, heat a large pan over medium to medium-high heat. Add 1 -2 tablespoons of olive oil, the onion, zucchini, and sausage. If you are using red pepper flakes, add it now. Season with salt and pepper. Cook for several minutes until sausage is warmed through and zucchini is tender.
  3. Add the garlic and stir for a moment. Turn off heat, add tomatoes, cooked pasta, and basil. Stir to mix. Add more salt and pepper if needed. Done! Top with Parmesan cheese if desired.
