This is probably my favorite sandwich of all time. A Turkey & Cranberry Sandwich.
Not only is it a great way to use Thanksgiving leftovers, it is a great lunch or light dinner any time of the year.
We have always made the after Thanksgiving turkey sandwiches where you just put whatever leftovers you have on some bread. Nothing else like it, I know. Yum!
One day, while out to lunch with my cousin at this little cafe, I ordered a turkey and cranberry sandwich. It was served on a croissant with cream cheese and almond slices. Delicious! From then on I made sure to have cream cheese to go with those leftover Thanksgiving sandwiches.
A few years back, while visiting Lake Tahoe, I ordered their version of this sandwich. I really do not remember the type of bread they used, but they had it piled high with turkey and arugula. So good! My son asked for a bite of it, and I never got that half of my sandwich back!
So, this post is for my son and those moments when he is craving our favorite turkey sandwich.
Turkey & Cranberry Sandwich
Croissant, Sliced Sourdough, or your favorite bread
Turkey lunchmeat, or leftover Thanksgiving turkey
Cream Cheese, whipped works great
Cranberry Sauce, fresh or canned (I prefer the whole berry)
In the sandwich posted above I used sliced Sourdough French Bread. So good! You can also use the always wonderful Croissant or really any type of bread you choose.
On one slice of the bread spread on some whipped cream cheese. Sprinkle with sliced almonds. Add turkey and arugula. On the other slice of bread, spread on some cranberry sauce and place it over the rest of the sandwich.
Slice in half and ENJOY!
