My daughter loves cucumbers and tomatoes. When we started our garden this year, we decided to try a cucumber plant along with our usual tomatoes and peppers. I thought I would try a Cucumber and Tomato Salad for her. She loved it!
I’m glad my daughter loves cucumbers, because we have a lot of them. Using ingredients that I already had in the house, I threw together this salad. It was simple to make and very tasty.
Cucumber and Tomato Salad
3 vine ripe Tomatoes
Cut tomatoes and cucumbers into bite size pieces and put in a large bowl.
1/2 cup Sour Cream
1 1/2 teaspoons Dill Weed (I wish I had fresh)
1-2 tablespoons finely chopped Red Onion
Juice from half of a Lemon
Salt and Pepper to taste
For the dressing, mix the sour cream, dill, red onion, and lemon. Stir and add salt and pepper to taste.
Pour the dressing over the cucumbers and tomatoes. I topped the salad off with some Sourdough Garlic and Herb Croutons that I had in the cabinet. The flavors went together nicely. It was a light and refreshing lunch on a warm, muggy day.
Next time I would like to try fresh dill, and maybe add some jalapeno for my husband.
