Well kiddos, here we are already, the first day of summer vacation 2014. This school year has gone by so fast. You guys are sleeping in this morning, so I thought I would surprise you with a special breakfast.
No syrup needed. Banana, Peanut Butter, Chocolate Pancakes. I doubt there is a better way to start the summer.
2 ripe Bananas, mashed
2 tablespoons Peanut Butter
1 cup Milk
1/2 teaspoon Vanilla
Mix together the ingredients listed above. Then stir in…
1 cup Flour
2 tablespoons Cocoa Powder
3 tablespoons Sugar
2 teaspoons Baking Powder
1/2 teaspoon Salt
Mix just until combined. Heat skillet over medium to medium low heat. Careful, these pancakes can burn easily. Add desired amount of batter to the skillet, I used about 1/4 cup for each pancake. Cook 1 – 2 minutes per side.
Cool pancakes slightly on a wire rack. Spread a small amount of peanut butter in between pancakes and make a stack of 2 – 4 pancakes. Top with whipped cream, chocolate chips, and a side of sliced banana.
