My daughter loves mac ‘n cheese. This past Thanksgiving I decided to make some for her and the other kids knowing that they wouldn’t enjoy all the traditional foods that I was planning on serving. After looking at a few recipes, and not having the ingredients to follow any of them, I threw together a batch with what I had on hand.
Just as I finished, my husband comes in (as he often does) looking for pans or bowls to sample out of. He took one bite out of the pan that I had just finished making the cheese sauce in, and he was a happy guy.
Ingredients needed are: Cheddar Cheese, Parmesan Cheese, Milk, Butter, Flour, Salt, Pepper, Nutmeg, and Macaroni.
|Mac ‘N Cheese|
Melt butter in sauce pan. Add flour and stir for a couple of minutes. Add salt, pepper, and a dash of nutmeg. Slowly stir in milk, cook and stir a few more minutes. The sauce will thicken up. Add the cheddar and Parmesan. Stir until the cheese melts. Sample and adjust the seasonings as needed.

While making the sauce, cook your macaroni. When it is done, drain completely. You can reserve some of the water just in case your sauce comes out too thick and you want to thin it down. Mine came out just fine, but it never hurts to have the water just in case.
Add the macaroni to the sauce, stir well, serve.
Mac ‘N Cheese
1 lb Macaroni, cooked
4 tablespoons Butter
1/4 cup Flour
2 1/2 cups Milk
8 ounces of shredded Cheddar Cheese
4 ounces of shredded Parmesan Cheese
Melt the butter in a sauce pan over medium heat. Add the flour, stir and cook for a couple of minutes. Add a little salt, pepper, and a dash of nutmeg. Stir. Slowly whisk in the milk. Stir and cook for a few minutes, the sauce will thicken up. Add the cheeses and stir until melted. Sample, and adjust the salt, pepper, and nutmeg as needed.
Mix the sauce with the cooked macaroni. Stir well. Serve.
