This recipe for Coffee & Chocolate Chip Cake is a variation of the Tiramisu Cupcakes I make. However, this cake is topped with a chocolate glaze, and filled with mini chocolate chips.
What is better than coffee flavored cake? Coffee flavored cake with chocolate frosting and chocolate chips of course!
Coffee & Chocolate Chip Cake
Start with your favorite white cake mix, and add strong coffee in place of the water. I like using instant espresso. I used 3 heaping teaspoons of instant coffee with 1 1/3 cups of hot water. Let the coffee cool before using. (You can also mix the instant coffee with a small amount of hot water, then add cool water to equal amount needed) Follow the directions for the rest of the ingredients on the back of the cake mix box.
Put all the ingredients in a bowl and mix it up.
Throw in a handful or two of chocolate chips. I used about 3/4 cup of the mini chips. Stir to combine. Tip: Mix the chips with a light sprinkle of flour before adding to your batter to prevent them all from sinking to the bottom of your cake.
Pour the batter into a pan. Today I used a bundt pan. Bake according to directions on the cake box.
When the cake has cooled, mix up a frosting/glaze. I used…
2 cups of powdered sugar
2 tablespoons of cocoa powder
1 teaspoon of vanilla
Just enough milk to give a nice consistency. Not too thin (you don’t want it all to run off the cake) and not too thick (you don’t want to have to spread it on the cake).
Drizzle frosting / glaze over top of cake. Sprinkle with more chips if desired.
