Recently, my family went on a mini-vacation to Monterey, CA. Three out of four of us being seafood lovers makes this a wonderful place to visit with the fabulous restaurant choices. One of our stops was Bubba Gumps Shrimp Co., where we had a fantastic lunch! I ordered ‘Jenny’s Catch with Lobster Butter Sauce’. YUM! It was made with Tilapia, served over sauteed spinach and mashed potatoes. As soon as we were home I knew I would have to try my own version of this recipe. This is what I came up with…

This is how I put it together…
First of all I made some basic mashed potatoes and added some crumbled bacon.
Then I lightly sauteed some spinach in butter and olive oil, and lightly sprinkled it with garlic powder and salt & pepper. I know the spinach is hard to see in the picture, but it is in there and it adds a wonderful flavor to this dish.
I seasoned some Talipia with garlic powder, salt and pepper. Saute the Talipia in some butter and olive oil.
When the fish was done, I used the left over oil and added a small amount of finely chopped onion, and a little bit of garlic. Cook that for a couple of minutes. Next, add a couple of chopped Roma tomatoes and a couple of Tablespoons of heavy cream. Cook the sauce until thickened.
Put some mashed potatoes on your plate, top those with a little spinach, then put a piece of fish on top. Spoon a little of the sauce over the top of that and you have it! Delicious!
